Extra Virgin Olive Oil

From Collazzi’s olivegroves, located in the cities of Impruneta and Scandicci, areas renowned for their temperate climate and highly suitable terrain, comes a high-quality olive grove and an excellent extra-virgin olive oil. Most of the estate is dedicated to the olive tree cultivation which not only yields an extraordinary product, but also uniquely characterizes the estate’s scenery as well as the surrounding Florentine hills. The color is intensely green, and the perfume fruity, as is typical of the fresh olives with a flavor that is both delicate and intense.

Most of the oil is produced by the Frantoio and Morellino varieties: the former deep green and with fruity aromas; the latter unmistakably smooth and pulpy. The harvest begins in late October and lasts through to mid November, and the olives are pressed immediately after being collected. Before being savored, the oil rests for a couple weeks in ancient terracotta jars.


The Villa

The majestic Villa I Collazzi stands at the heart of the estate, located on a rectangular terrace on top of a hill. The entrance is lined with cypresses that lead to the Villa and its garden. Inside the Villa are stunning paintings from the Renaissance period, along with a beautiful family chapel and a cellar with the oldest olive oil mill in Italy.
